What is specialty coffee?
Specialty coffee is high-quality graded coffee.
Where do you source coffee?
We source coffee directly from Indonesian farmers and processors.
Can you explain briefly about the processes?
Mossto Honey – A honey process where coffee mucilage is retained during drying, combined with fermentation guided by mossto (a fermentation liquid derived from coffee). This tends to produce high sweetness, layered fruit, and a rounder tactile profile.
Natural Anaerobic (72H) – Whole cherries fermented in a sealed oxygen-free environment for around 72 hours before drying as natural. Typically results in deeper fruit concentration, heavier body, and wine-like complexity.
Natural Oxigenium – A controlled oxygen-managed fermentation where airflow is intentionally regulated rather than fully anaerobic. This approach builds aromatic intensity while maintaining cleanliness and stability.
Natural Double Ferment – Two-stage fermentation applied to whole cherries before drying. The layered fermentation tends to amplify ester complexity and produce more exotic flavour profiles.
Hybrid Wash – A process combining elements of washed and controlled fermentation techniques. The result is typically cleaner and more structured than naturals, with pronounced florals and bright acidity.
Honey with Yeast (Purple Honey) – A honey-style process using controlled yeast fermentation to intensify fruit character and sweetness while maintaining a dense body.
Triple Yeast Washed – A washed process enhanced with multiple yeast cultures to build aromatic complexity while retaining clarity and precision.
Black Honey – A high-mucilage honey process with slower drying, producing syrupy body, darker fruit tones, and deeper sweetness.
