
Producer Spotlight: JB Coffee

At Dawn Coffee Curators, we believe the most exciting coffees begin with producers who are willing to question convention while remaining deeply connected to origin. JB Coffee is one of those producers.
Based in Temanggung, Central Java, JB Coffee works across the volcanic landscapes surrounding Mount Sindoro, Mount Sumbing, and Mount Prau, while also collaborating with Liberica farmers in Kendal, one of Java's fertile Liberica-producing regions. These distinct terroirs allow them to work across multiple coffee species, including Arabica, Liberica, and Robusta, each grown in environments best suited to their natural expression.
Led by Reza Nurullah, JB Coffee approaches fermentation as a tool to express origin and variety with intention and control. On the eve of 2026, we had the pleasure of meeting Reza himself on our first official origin trip, where we had the chance to ask him further about his thought process. Reza was named the most influential coffee producer in Indonesia in 2025. He emphasizes the importance of managing time, microbial activity, and structure rather than pushing over fermentation character. This philosophy has led to the development of multi-stage and mosto-based fermentations, applied thoughtfully across different processing styles.
Funnily enough, his craft has traveled more countries than he has, being used in many national-level competitions, with a few gracing even the world stage. In contrast to the unassuming presence he has, these feats have become a silent testament to his work.
Some of the persisting contemporary processing methods, such as carbonic maceration, have taken some inspiration from long-standing traditions like winemaking. Similarly, Reza’s sensibility has drawn him to study yeast from these traditions as well, which made all the more sense to us. Yeast application for coffee processing, although widespread across the globe, is mastered by only a few in comparison. In the processors’ pursuit of progress in yeast applications, what could be better than to refer to the wisdom of those who have mastered it, i.e., winemakers and brewmasters?
For us, what makes JB Coffee unique is not simply the innovation itself, but the intention behind it. Every processing decision begins with the question:
"How can we express this coffee more clearly?"
This philosophy is perhaps most evident in their work with Liberica. A species often recognised for its heavy body and distinctive tropical character, Liberica has historically been overlooked within specialty coffee. Through years of refining species-specific processing, JB Coffee has demonstrated that Liberica can also express delicate florals, vibrant acidity, and remarkable clarity while retaining its unmistakable identity.
This same mindset extends across their Arabica production from Mount Prau and Mount Sindoro, where different fermentation approaches are used not to create flavour, but to emphasise the character already present in the coffee.
